Filet knives
I need to buy a new filet knife and just curious what brand you guys use. I had 2alaskan knives and liked them was going to buy another but thought I'd see what some of you guys use.

Dexter 9" fillet knife - This is the standard, white handle one - cheap, stays sharp, just flexible enough.

And went this way and was NEVER happier.
Never have to sit and sharpen a blade ever again.

Dexter Russel 1378 for fillet and a Forschner Cimeter 10" for skinning (large fish).
I also bought a professional sharpening tool (EdgePro) that is the best on the market and actually works.

just about every charter out of Seward uses a Forschner #50513 for halibut and #40643 Called a "salmon sword". These knives keep an edge very well ( will last all season and if you drop it in the water, ohh well. Everyone uses a ceramic stick sharpener while cleaning fish to maintain and a steele stick sharpener every couple days. I've filleted thousands of fish with these knives. You need to make sure they have a Victorinox handle though, it makes them about double the price but it's well worth it.

My New favorite fillet knives are Kershaw they approached me last year at the Portland Sportsman Show and asked if I would like some knives to display with my fillet tables and I said sure. A couple months had gone by and I had forgotten about the conversation when package arrived addressed to me and here is what I got. I have used them and they work great and I am not saying that because they gave them to me they are great knives. This is their new line of fillet knives.

I have used several different brands, but my favorite is a victorinox (by Forschner) with a fibrox handle. It is easy to grip and control, and the blade stays very sharp with occasional use of a sharpening steel. I have gotten into the habit of using the steel a little bit each time I use it. That's what I use for salmon and most bottom fish. I have the big, slightly curved dexter for halibut.

My favourite knives thus far are the Alaskan Knives. I like the weight, feel, and edge. They have been good to me, but I like to see what others are using. I have ordered two Dexter Rusell knives to see how they hold up. I don't mind sharpening as I like to have a good edge and I have a good sharpener. Really doesn't take too long and I enjoy it believe it or not.
The victorinox knives are nice too, and I may get one for next year depending on how the Dexter's hold up.
